Warmstellen.</span><div class="wprm-spacer"></div><span style="display: block;"><strong>Maishendlbrust:</strong>Die Hendlbrüste mit Salz und Pfeffer würzen, in Olivenöl auf der Hautseite scharf anbraten, wenden und ca. 10 Minuten bei 180 °C im vorgeheizten Backrohr fertig garen.</span><div class="wprm-spacer"></div><span style="display: block;"><strong>Sauce Hollandaise:</strong>Butter in einem kleinen Topf schmelzen und einmal aufkochen. Die helle Molke mit einem Löffel abschöpfen – es bleibt die geklärte Butter.Eigelb mit Weißwein, Spargelfond, Salz und Pfeffer über einem heißen Wasserbad schaumig aufschlagen. Vom Herd nehmen und die warme, geklärte Butter langsam unter ständigem Rühren einarbeiten.</span><div class="wprm-spacer"></div><span style="display: block;"><strong>Anrichten:</strong>Den Spargel auf Tellern anrichten, Kartoffeln und Hendlbrust dazugeben und alles mit der frischen Sauce Hollandaise vollenden.</span></div></li></ul></div></div>

<span style="display: block;">Kartoffeln schälen und in ca. 4 mm dicke Scheiben schneiden oder hobeln.<br />Milch, Obers, Salz und frisch geriebene Muskatnuss in einem Topf aufkochen, Kartoffeln zugeben und ca. 5 Minuten leicht köcheln – dabei regelmäßig umrühren.<br />In eine feuerfeste Form geben, mit Käse bestreuen und im vorgeheizten Rohr bei <b>180</b><b> </b><b>°C ca. 20 Minuten überbacken</b>, bis die Oberfläche schön goldbraun ist.</span><div class="wprm-spacer"></div>

<span style="display: block;">Das Gemüse in ca. 2&#215;2 cm große Stücke schneiden, in einer Pfanne in Olivenöl scharf anbraten.<br />Knoblauch und Kräuter dazugeben, mit Salz und Pfeffer abschmecken.<br />Nach 5–7 Minuten in eine feuerfeste Form geben und bei <b>180</b><b> </b><b>°C für 12–15 Minuten im Ofen nachgaren</b>.</span><div class="wprm-spacer"></div>

<span style="display: block;">Filets leicht salzen, mit etwas Zitronensaft beträufeln und auf der Hautseite leicht mehlieren.<br />In einer Pfanne mit Butter auf der Hautseite bei mittlerer Hitze braten.<br />Währenddessen regelmäßig mit der heißen Butter, Zitronenzesten, Knoblauch und Kräutern übergießen.<br />Am Schluss kurz wenden – nur wenige Sekunden – und sofort servieren.</span></div></div>
